The main difference between them is TOME really shines on its combat and ADOM really shines on its depth of interactions (with the world, with items, etc). TOME doesn't offer too much outside of questing and killing, while ADOM doesn't offer much for combat outside of bumping into things. That said they're both great - my two favorite roguelikes.
