Sky Airlines uses the newer a320neo compared to LATAM's a319 or older a320s - I have flown both and you can tell LATAM planes had better days. But it's a very short so who cares how the interior looks.

Urubamba is in a wider spot so you don't have the mountains rising right on the edge of the town quite to the same extent. And Ollantaytambo has the ruins right in town which enhance the view. Urubamba doesn't have that.
