The statues tell you that when you're at 30 hearts and try to increase hearts or 3 full wheels and try to increase stamina. But on the flip-side things like Mipha's Grace and food that give temporary (yellow) hearts cant give you above 30 hearts either.Enough to get the Master Sword and you're good to go. If you can beat thunderblight you can beat ganon. I think you’d need about 7 hearts to comfortably do ganon, and with the powers of the divine beasts it gets even easier. Though since it sounds like this is your first playthrough i’d recommend not rushing to ganon.

I can reload a save and attempt beating enemies again, but having to stop more when climbing and running is far more annoying for me. you can eat stamina restoring food while in the middle of climbing, and there are even cooking items that increase your max stamina temporarily. much easier to get the stamina food however.So if you have 4 full hearts, and an enemy does 8 hearts of damage, you'll lose 3.75 hearts. If you had 8 hearts for the same attack you'd lose 7.75 hearts. You can however max out your Heart Containers before entering the Divine Beasts. If you try to pick up the Heart Container afterwards, the game won't allow it. You'll have to leave the DB, swap your hearts for stamina at the Horned Statue, travel/warp back and pick up the Heart Container which will be sitting next to the resting Divine Beast then.
Actually, max stamina still lets you have all three bars of temp stamina, while max hearts prevents you from using more than 3 (2 with DLC) temp hearts. Having max stamina makes more sense. Reply reply

But the thing is you can get the master sword with 13 natural hearts. So I'd go hearts until you get 13 and then get the master sword. Then go stamina. I went straight stamina until I could have gotten 13 hearts and then I switched them.Get a few (like, two or three tops) hearts early on because getting one-shotted sucks and you don't have much armour at the beginning. But stamina is more useful in more situations - you are better at running away from fights to start with! Oh and you can climb and glide further, which turns out to be really helpful.
